Punchdowns: one of the best upper-body workouts in winemaking! 🍷

During red wine fermentation, the cap of grape skins can become surprisingly thick and compact. Depending on the size of the ferment and how active it is, breaking through that layer can take some serious effort!

Punchdowns are typically done using a long tool with a flat plate on the end, which is pushed through the cap to submerge the skins in the fermenting juice below. The goal is to work across the entire surface, breaking up the cap and making sure all those skins get thoroughly submerged .

As fermentation becomes more active, CO₂ continuously pushes the skins back to the surface, meaning the cap can reform pretty quickly! That’s why punchdowns are often repeated several times a day.

The frequency depends on the grape variety, fermentation activity, and the winemaker’s desired level of extraction.

It’s a simple technique, but one that requires plenty of attention (and muscle) throughout harvest!

Some of the coolest vineyard innovations

1. Whole-vine gas exchange chambers

These chambers allow researchers to monitor gas exchange across an entire vine canopy rather than looking at just one leaf. By tracking gases like CO₂ and water vapor while controlling airflow, temperature and humidity, researchers can study whole-vine photosynthesis, respiration and transpiration—and how those processes respond to different environmental conditions or treatments.

2. Leaf area scanner

Leaves are passed through this scanner to precisely measure their surface area. Researchers can use these measurements to estimate total canopy leaf area, quantify vegetative growth and compare how vines grow under different treatments or conditions. Leaf area is also useful for understanding the balance between the vine’s photosynthetic canopy and the amount of fruit it is supporting.

3. Portable photosynthesis / gas-exchange analyzer

This device lets us measure a leaf’s physiological “vitals” in real time. It measures parameters such as photosynthetic rate, stomatal conductance and transpiration, helping researchers understand how actively the vine is functioning and how it responds to things like water stress, heat, environmental conditions or experimental treatments.

4. Pressure chamber

This instrument measures vine water potential, which helps us understand the vine’s water status and degree of water stress. As water becomes harder for the vine to access, greater tension develops within its water-conducting system. Measuring that tension gives researchers and growers another way to evaluate drought responses and make more informed irrigation and vineyard-management decisions.

5. Autonomous vineyard robots

This is where vineyard technology starts looking particularly futuristic. Robots equipped with cameras, sensors, computer vision and machine learning are being developed to navigate vineyard rows, recognize vine structures and perform tasks such as pruning. Technologies like these are being explored as potential ways to address labor shortages, automate repetitive tasks and collect highly detailed vineyard data.
